5. Egg temperature control
The temperature of your eggs prior to boiling also affects peelability. Bringing eggs to room temperature before cooking reduces the risk of cracking caused by thermal shock when cold eggs hit boiling water.
Room temperature eggs cook more evenly, which helps the membrane separate better from the shell. However, if you are short on time, placing cold eggs directly into cold water and then heating slowly to boiling can minimize cracking.
Allow refrigerated eggs to sit out for about 20 minutes before boiling.
If boiling from cold, put eggs in cold water and heat gradually to boiling.
